Tomato Fried Rice Topped w/ Basil
I've always loved fried rice. I thought maybe I can change it a bit and try this recipe that I've read from Connie Veneracion's blog. By the way, I love reading Connie's posts. She's smart, well scratch that, she's a really intelligent & highly opinionated lady. She's a lawyer (aside from being ultimate "culinary mama") and is the voice behind the Sassy Lawyer blog to which I think she'd already changed the name to Casa Veneracion blog.
So here's the recipe lifted from her blog. Compliments to Connie of Home Cooking Rocks. Enjoy!
Ingredients:
- 1/4 c. of olive oil
1 onion, finely sliced
2 cloves of garlic, minced
2 c. of cooked rice
1/4 c. of chunky tomato sauce
sweet basil leaves, thinly sliced or roughly chopped, whichever you prefer - Pour off the olive oil until only about 3 tbsps. remain in the pan. Saute the onion and garlic until fragrant. Add the rice and tomato sauce. Cook, stirring, until the rice is heated through and has absorbed the tomato sauce.Turn off the heat. Sprinkle with the basil leaves and serve hot.

The 5 things I like about being a WAHM, and more.

5 things I like about being a WAHM:
1) being around my daughter 24/7
2) quick trips to the mall or practically anywhere I wanna go during the day or the freedom of taking out my daughter (or myself) for a quick movie at a nearby mall without worries.
3) learning how to cook delicious & healthy meals for my family
4) no more commuting in the rain
5) afternoon naps (this is healthy!)
5 things I surely missed (and still missing, sometimes) about working in an office:
1) the presence of having officemates around (to share funny jokes with, etc.)
2) friday night drinks/movies
3) christmas parties!
4) company outings
5) 13th (and 14th) month pay, Christmas bonus, paid leaves, etc.
For number five, this is true for most employees working as a Virtual Assistant like me. Just in case they're lucky, some businesses act like a company here in the Philippines who offer the same benefits such as paid leaves, 13th month pay, bonuses, etc. but they are also subjected to government taxes, SSS, Philhealth dues, etc. which we normally don't have.
If you've read this post and is quite convinced to work as a homebased professional or Virtual Assistant please understand that it's not all bed of roses. There are a handful of challenges you need to master to succeed. But as long as you're happy with what you do, you'll be fine. :-)
Let me know if you've got any questions, I'm more than happy to answer them.

Internet Marketing Seminar: Jomar Hilario
On 25th June, my husband & I attended the Internet Marketing "Online Wealth Breakthrough" Seminar by Philippines' Internet Marketer guru, Jomar Hilario.
One sentence: It was a blessing for us who had long been looking to create passive incomes that will help us reach our goals.
Jomar is a reliable source and he really knows what he's teaching. He was very generous with the information that he shared with us. We learned how to create online money making opportunities and make it work for us. He taught us how to do it the "right way" through proven methods which will save us a lot of headaches from doing it wrong, in the future!
Thank you Jomar, both of us are looking forward to be a part of your Online Mentoring Club where we will be mentored by you for 1 year. Just wait and see. Hehe :-)
